KX-1 is a specialized cultivar of Siberian kale with beautifully mottled leaves and a mild, less-bitter kale flavor. Traditionally grown as a winter crop. Despite its name, it’s actually more closely related to the turnip than true kale.

Cuisine: The leaves of KX-1 are much softer than most kales and can be used raw and in salads, although it can still stand up to being sautéed, boiled, or roasted.

Mixology: While we’re not necessarily in the habit of drinking kale cocktails ourselves, you’re more than welcome to attempt a MosKale Mule, or some other creative concoction.

Pairings: Garlic, shallots, sweet potato, avocado, pancetta, pine nuts, cream based sauces and dressings, butter, olive oil, light bodied vinegars, robust cheeses and fresh herbs such as thyme, sage, and rosemary.
